Fleur du Maquis is a distinctive square sheep's milk cheese with rounded corners, generously coated in wild Corsican herbs, spices, and juniper berries. When young, it is mild and sweet with fresh lemony notes. As it matures in the caves, the flavour becomes richer, more aromatic, and creamy, with herbal complexity drawn from its rustic rind.
Made in Corsica from the milk of Lacaune ewes, the cheese is encrusted with rosemary, fennel seeds, juniper berries, and occasional bird's eye chili. Beneath the herb-coated rind lies a supple, cakey interior that gradually develops a luscious, creamy layer close to the surface.
Its name means "Flower of the Maquis," referring to the wild Corsican landscape. Corsica—birthplace of Napoleon Bonaparte—belongs to France, yet carries a strong Italian influence that is reflected in the cheese's character.
