Kaltbach Cave-Aged Gruyère AOP (24 Month) is a premium Swiss hard cheese crafted from raw cow's milk and matured deep within the natural sandstone Kaltbach caves near Lucerne, Switzerland. Aged for a full 24 months, this exceptional Gruyère develops an intense, complex flavour marked by fruity tang, earthy depth, and crunchy salt crystals that deliver remarkable character and balance.

The caves' constant cool temperature and 96% humidity allow the cheese to mature slowly, forming its distinctive dark rustic rind and richly layered profile. Expect notes of dried stone fruit, hazelnut, spice, and black tea with a long, savoury finish—bold yet never bitter.
